When you’re gutting the trout you will gut it from the belly section starting from the tail, back to forward. After that remove the innards then the blood strip in the back of the spine by taking your thumb and rolling it up on that.
This is the way you bleed out the trout to help keep it fresh. Then cut the gills off because they are a hotbed for bacteria which causes the trout to smell bad and lose its fresh tasty flavor.
